Corn Pops Treats

This past Christmas, one of my friends gave us these so-very-yummy treats. We made these and handed them out as Christmas gifts. They were a huge hit at Scott's work. His co-workers were instructed to take the treats home to share with their families. Unfortunately, only one of his co-workers was able to save a small handful to share with his family(and he was having withdrawals). The rest couldn't resist the temptation and finished it right away. Anyway, it's a simple recipe that Tiani and I make with no problems. I love problem-free recipes, don't you? Well, my entire family fell in love with this simple treat. It's great for a movie night, FHE, or whatever.

Melt in sauce pan:
1 cube butter
2 T. light corn syrup
¼ c. water
1 c. sugar

Stir constantly until it reaches 240 degrees Fahrenheit. Apply to ½ bag of 16 oz. Corn Pops (from Barrel O' Fun), and mix well. That's it! My friend recommended that we use a large metal bowl, not plastic. I didn't have a large metal bowl, so I used my friend Tessa's turkey roaster. It did the job and the treats turned out great! :) If you double the recipe and use the entire bag, it makes 2 large bowls of treats.

Carmel Corn

Derek and I made some yummy carmel corn. It was easy and tasted good.

Prep Time: 15 minutes
Cook Time: 45 minutes
Yield: 4 quarts

  • Cooking Spray
  • 4 quarts popped popcorn
  • 1 cup brown sugar
  • 1/2 cup Karo Light OR Dark Corn Syrup
  • 1/2 cup (1 stick) butter OR margarine
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon Vanilla Extract
  1. Spray a large shallow roasting pan with cooking spray. Add popcorn and place in preheated 250°F oven while preparing caramel.

  2. Mix brown sugar, corn syrup, butter and salt in a heavy 2-quart saucepan. Stirring constantly, bring to a boil over medium heat.

  3. Boil 5 minutes WITHOUT STIRRING. Remove from heat. Stir in baking soda and vanilla.

  4. Pour syrup mixture over warm popcorn, stirring to coat evenly.

  5. Bake for 45 minutes, stirring occasionally. Remove from oven and spread on foil that has been sprayed with cooking spray.

  6. Cool; break apart. Store in tightly covered container.
