The BEST Chocolate Chip Cookies
The BEST Chocolate Chip Cookies EVER:
1/2 C. shortening
1/2 C. (1 stick) butter or margarine - softened. (This is VERY important!: Do not soften butter or margarine too much, your cookies will totally flatten if butter is too soft)
1/2 C. granulated sugar
1C. packed brown sugar
2 eggs
2 teaspoons Pure Vanilla extract
2 C. flour - sifted
1 tsp. baking soda
1/2 tsp. salt
1 1/2 C. chocolate chips
Preheat oven to 350 degrees. Cream together shortning, butter and sugars until light and fluffy. Don't overmix. Add eggs and vanilla and mix just until incorporated. Mix in sifted flour, baking soda and salt a little at a time just until combined. Fold in chocolate chips.
Bake at 350 degrees until the center is no longer glossy. About 8-10 min. Don't over bake! When it hits 8 min, sit at the oven and watch because they go fast after that. Take them out if you even THINK the edges are getting brown. Enjoy!

Peanut Butter Banana Oatmeal Raisin Cookies

Long name but really good! I love peanut butter and banana and my husband loves oatmeal raisin so I was excited to come upon this recipe. All the ladies in my beading group loved them too. Also I used splenda instead of white sugar so they are a tad healthier. there are a lot of variations possible. Enjoy!

INGREDIENTS
- 1 banana, peeled and mashed
- 1 cup peanut butter or reduced fat P.B.
- 1/2 cup white sugar or splenda
- 1/2 cup packed brown sugar
- 2 egg whites
- 2 cups whole wheat flour or all purpose flour
- 1 teaspoon baking soda
- 1 cup rolled oats or instant oats
- 1 cup raisins or choc. chips
DIRECTIONS
- Preheat oven to 300 degrees F.
- In a medium bowl, stir together mashed banana, peanut butter, white sugar and brown sugar until smooth. Then mix in the egg whites. Add flour and baking soda, mix until just blended, then stir in the rolled oats and raisins.
- Drop cookie dough by heaping spoonfuls onto an unprepared cookie sheet. Bake for 15 to 17 minutes in the preheated oven. When cookies are done, remove from the baking sheet and cool on wire racks.

Chocolate Coconut Cookies
I made some cookies for an enrichment tonight. There were some compliments on them so I thought I would share the recipe. Not to mention, they were super fast and easy.
Take 2 egg whites and whip till soft peaks (tips curl), add 1/2 tsp vanilla extract. Gradually add in 2/3 cup of white sugar till peaks are stiff (tips stand straight). Fold in 1-1/2 c. of coconut. Drop on greased cookie sheet and bake in preheated oven at 325 degrees for about 20 min.
When cooled, melt chocolate in microwave. Dip bottoms of cookies in chocolate and place on wax paper. Take fork and splatter chocolate in zigzags on each cookie. Refrigerate for 10 min. Enjoy.
