"Mexican Cliche Cake"


Here's the "Mexican Cliche Cake" that I made for Jacob's cousin when he came up to go to the MTC. Obviously, he's going to Mexico on his mission. Pretty funny, huh? The chilis that make out his name are all from fondant. The BOM is a fondant/gumpate mixture and the taco and sombrero are gumpaste. I used a fork to get the texture on the taco shell, then pained it.

Jackson's Blessing

Shelley did a great job decorating cakes for Jackson's blessing. Every kept saying how gorgeous they were. I have to agree. They were really fun to make. I have a pan that bakes the cake with a hollow center and you can fill it with what ever you want. We filled these with ice cream. The first cake was spice cake with french vanilla ice cream and the second cake was dark chocolate with mint and chip ice cream.





Oh...we also had cupcakes. They were very pretty and tasty too!

50th Anniversary


OK? Where is everyone else's blogs?? I know you've made cupcakes lately Beth, HEEELLLLOO!!! Anyway this is a recent cake I did for a 50th Anniversay. I made the 50 on the front with gumpaste and luster dust. It was SUPER gold. The kids that saw it didn't think it was edible. It was chocolate cake on top with chocolate hazelnut mousse filling and carrot cake on bottom with whipped cream cheese filling.

Blueberry and Blackberry Muffins

makes: 15 muffins
Prep: 15 min
Cook: 20 min

3/4 c butter
1/2 c sugar
1/2 c applesauce
1/3 c milk
1 egg
1 tsp vanilla
1 3/4 c flour
2 1/2 c baking powder
1/2 tsp salt
3/4 c blueberries
1/2 c blackberries chopped
1 T flour

Preheat oven to 400*. Cream butter and sugar together. Add applesauce, milk, vanilla and egg and beat until smooth. Sift together flour, baking powder, and salt. Add to creamed mixture. (only mix till blended or youll get coned and tough muffins). Toss blueberries and blackberries in T flour and fold into batter. Spoon into well greased muffin pan 2/3 full or use muffin cups. Bake at 400* for 20 min.
